Chocolate mugcake

You can make this healthy chocolate cake really easy and quick and it’s delicious!

Ingredienten:
– 1/2 ripe banana
– 1 egg white
– 1 tablespoon cacao
– 1 tablespoon greek yoghurt
– 1 tablespoon spelt flour or another tipe of healthy flour
– 1 tablespoon soy milk
– a little bit of baking powder
– a little bit of cinnamon
– 1/2 tablespoon cocosoil

For the topping i used greek yoghurt and warm blueberries. But you can top them with whatever you like. Some other fruit or nuts…

– Mash the banana with a fork.
– Add the raw cacao and mix it with the banana.
– Put it in a big mug with all the other ingredients and make a smooth dough.
– Put the mug in the microwave for 3 minutes ( may depend on the microwave ).

– Put the cake on a plate and top it with the greek yoghurt and blueberries.

Peanut butter cinnamon pancakes

Ingredients:
– 3/4 ripe banana
– 1/2 tablespoon cinnamon
– 2 egg whites
– 2 tablespoons spelt flour or whole-wheat flour
– some baking powder
– 1 tablespoon soy milk
– 1 tablespoon greek yoghurt

For the topping:
– 1 tablespoon peanut butter
– some nuts (almonds, brazil nuts, wall nuts or some other nuts you prefer)
– some raisins
– 1/4 banana

– Mash the banana with a fork.
– Add the cinnamon and mix it with the banana.
– Add all the other ingredients and mix everything.
– Heated some oil ( i used cocosoil) in a pan and make some small pancakes.

– Put the pancakes on a plate and top them with the peanut butter and nuts, raisins and some pieces banana.

Banana peanut butter breakfast

I love the combination of peanut butter and banana, and I eat it a lot, so I’m going to share this recipe. Of course it’s a healthy breakfast. Now you may think peanut butter and healthy? Peanut butter contains a lot of fat, but just that healthy fats that make you full for a long time. I choose an organic peanut butter so it contains no sugar, salt and other additives. Just 100 % peanuts 🙂

Ingredients:
– 1 big banana
– some blueberries
– some raisins
– 40 grams spelt flakes
– 2 dl water or milk
– 1 tablespoon peanut butter
– 1 tablespoon suger free muesli ( only with natural sugars )
– a little bit of cinnamon

– Boil the water or milk ( what you prefer ) and add the spelt flakes.
– Add a little bit of cinnamon and boil everything for 10 minutes.
– In the meanwhile cut the banana into two pieces.
– When the spelt flakes are ready add the raisins and put 2/3 on a plain and top this with the two banana pieces.
– Cover now the middle of the banana with the rest of the spelt flakes.
– Now spread the peanut butter on the speltflakes en top it with the blueberries and muesli.

Pumpkin pancakes

Healthy pumpkin pancakes with caramel. I used Optimel Caramel custard 0% fat. I bought it in Holland but i’m not sure if you can buy it in other countries. You can also use some other healthy product for the topping of the pancakes.

Ingredients:
( for 3 medium pancakes )
– 1 ripe banana
– 2 egg whites
– 80 gram cooked pumpkin
– 10 gram spelt flour (or another healthy tipe of flour)
– 1/2 tablespoon cinnamon
– a little bit of baking powder
– 100 ml Caramel custard (Optimel)

– Blend the banana to a smooth mixture.
– Blend also the cooked pumpkin.

– Mix the banana and pumpkin mixture with the egg withes, flour, cinnamon and baking powder and creat a smooth dough.
– Put some oil in a pan and bake 3 pancakes. I baked them one by one, you can keep them warm to put them on a plate and cover the pancakes with some aluminum foil.

– When you baked all the pancakes, top the pancakes with the caramel custard.
