Loaded organic nacho’s

It’s maybe not even a few months ago I tasted nacho cheese for the first time, and I love it! And because I love to cook and find out new recipes I decided to make my own recipe for loaded nacho’s on a more healthy way! I bought organic canned red kidney beans at the reform store because in the regular food market I only found beans with added sugar. I also bought the corn nacho chips in the reform store, they are also organic. And I have chosen for a 30+ cheese which contains more calcium and less fat. And to make it even more healthy I made the sauce and guacamole also by myself. 😉

Ingredients:
– Organic nacho chips
– 240 gram canned red kidney beans
– 300 gram canned tomato pieces
– 130 gram corn
– 1 red bell pepper, sliced
– 1 jalapeno slices
– 160 gram grated cheese
– 100 gram soya meat
– 2 Tomatoes
– 2 teaspoons tomato puree
– ½ onion, sliced finely
– Cloves garlic, minced
– Cocos oil
– Lettuce
– Cucumber
– Greek yoghurt
– Guacamole ( self-made )
– Tortilla herbs

The mean ingredients

What to do:
– Let the kidney beans and corn drain. ( separated from each other)
– preheat the oven to 200c.
– Put some oil in a big pan, and bake the onion and garlic until soft and add the pepper and meat.
– Bake this for 5 minutes.
– Add the canned tomatoes, tomato puree and the other herbs, stir well and add the beans and half of the corn.
– heat it, but do not let it boil.
– Cover the bottom of your baking dish with nacho chips
– Cover de nacho chips with the grated cheese and cover this again with some nacho’s and cheese.
– Put this in the oven for 8 minutes on 200c.

– Cut in the main while the lettuce, cucumber and tomatoes in small pieces and put this together.
– Take the nacho chips out of the oven and sprinkle a part of the beans mix and the jalapenos over the chips and cover this again with a layer of chips, and top this again with the beans mix.

– Top this with some grated cheese.

– And top this with a part of the lettuce, 1 tablespoon guacamole and 1 tablespoon Greek yoghurt.

– Serve the other part of the guacamole, corn, grated cheese and kidney beans in a separated bowl.

– Serve it also with the Greek yoghurt and if you prefer you can also serve it with wraps and some rice, quinoa or bulgur.

Chocolate mugcake

You can make this healthy chocolate cake really easy and quick and it’s delicious!

Ingredienten:
– 1/2 ripe banana
– 1 egg white
– 1 tablespoon cacao
– 1 tablespoon greek yoghurt
– 1 tablespoon spelt flour or another tipe of healthy flour
– 1 tablespoon soy milk
– a little bit of baking powder
– a little bit of cinnamon
– 1/2 tablespoon cocosoil

For the topping i used greek yoghurt and warm blueberries. But you can top them with whatever you like. Some other fruit or nuts…

– Mash the banana with a fork.
– Add the raw cacao and mix it with the banana.
– Put it in a big mug with all the other ingredients and make a smooth dough.
– Put the mug in the microwave for 3 minutes ( may depend on the microwave ).
